Maple Delight Bars
Chewy maple-flavored oat bars with butterscotch chips and nuts
Ingredients
- ⅔ cup shortening
- ½ cup brown sugar
- ½ cup white sugar
- 1½ teaspoons maple flavoring
- 1 teaspoon vanilla
- 2 eggs
- 2 cups sifted flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ⅔ cup milk
- 1½ cups quick-cooking oats (possibly 1⅔)
- ½ cup chopped nuts
- 1 package (6 oz.) butterscotch chips
Method
The card lists only the ingredients. There are no directions, and the back is blank.
As written: The fractions on this card are stacked, and the bottom number often drops onto the next line, so a few amounts are hard to read. The soda looks like ½ teaspoon, and the oats could be 1½ or 1⅔ cups. The maple flavoring, vanilla and baking powder are marked (?) because they could also be read as ½ teaspoon. “B. sugar” and “W. sugar” are brown and white sugar, ½ cup each.
- Heat the oven to 350°F and grease a 9x13-inch pan (or a 10x15-inch jelly-roll pan for thinner bars).
- Cream the shortening with the brown and white sugars until fluffy. Beat in the maple flavoring, vanilla and eggs.
- Sift the flour with the salt, baking powder and soda. Add it to the creamed mixture alternately with the milk.
- Stir in the oats, nuts and butterscotch chips.
- Spread evenly in the pan. Bake about 25 to 30 minutes in a 9x13 (about 20 to 25 in a 10x15), until golden and a toothpick comes out clean.
- Cool in the pan and cut into bars.
