Devil’s Food Cake
A red-ink card for a classic cocoa devil’s food cake
Ingredients
- 2 cups sugar
- ½ cup butter
- ½ cup cocoa
- 3 eggs
- ½ cup sour milk
- 2¼ cups flour
- 1 teaspoon vanilla
- ½ teaspoon salt
- 1 teaspoon baking soda stirred into 1 cup boiling water
Method
- Mix in order: Combine the ingredients in the order listed, creaming the sugar and butter first.
- Last: Stir the soda into the boiling water and add it last.
- Bake: The card doesn’t give a pan, temperature or time. See our suggestion below.
As written: Like several cards in this box, the fractions are stacked and the bottom number drops onto the next line, so the “2” before “3 eggs” belongs to the ½ cup of cocoa above it. “Sour milk” is milk soured with a little vinegar or lemon juice.
Our suggestion (our note, not part of the card)
- Bake in a greased and floured 9x13-inch pan at 350°F for about 35 to 40 minutes, or two 9-inch layers for about 30 minutes, until a toothpick comes out clean. The batter will be thin.
- To make sour milk, put 1½ teaspoons vinegar in a measuring cup and add milk to ½ cup. Let stand 5 minutes.
