Apple Sauce Cookies
Soft applesauce raisin cookies, with a brown-sugar frosting on the back
Cookies
- ½ cup shortening
- 1 cup brown sugar, packed
- 1 egg
- 1 cup applesauce
- 2½ cups sifted flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 teaspoon cinnamon
- 1 cup raisins
Frosting
- 3 tablespoons oleo (margarine)
- 3 tablespoons brown sugar
- 1 teaspoon vanilla
- Powdered sugar
Method
- Mix: Cream the shortening and brown sugar, beat in the egg and applesauce, then stir in the flour, soda, salt and cinnamon, and the raisins (the card gives no mixing order; this is the usual one).
- Bake: Drop onto a greased cookie sheet and bake at 375°F for 15 minutes.
- Frost: Melt the oleo and brown sugar in a saucepan, add the vanilla, and stir in enough powdered sugar to make a spreadable frosting. Frost the cooled cookies.
Our suggestion (our note, not part of the card)
- Start checking at 10 to 12 minutes; the cookies are done when the tops spring back.
